Now that it is colder, the desire to prepare sweet and baked things returns. Cakes and pies are my weakness. I love them! This time I want to share a very simple recipe that is traditional from Argentina, it is made with oatmeal and milk, and depending on the amount of flour that you use, it can be left as cake or as oatmeal bars. My children love it, and I, as a mom, also prepare them, since they are very nutritious as well as delicious. Perfect to eat at breakfast before school, or as a delicious bite at snack time accompanied by a warm cup of milk before doing homework. With milk they are stronger.
Whole oatmeal is one of my favorite cereals, in Argentina it is widely used to prepare various recipes, and it is precisely its versatility that I love, since it can be incorporated into many dishes and recipes and take advantage of its benefits. On the other hand, milk… In Argentina, our mothers raise us based on milk! If there are Argentine moms reading this post, they will surely agree with me. I stopped drinking chocolate milk some time after arriving here to the United States. I changed the habit for coffee with milk, I think more than anything because of the weather, because I used to drink my chocolate milk cold. Of course I passed this tradition to my children, who are addicted to milk, for real! They even sometimes drink milk, instead of water with meals.
I hope you are encouraged to prepare the following recipe below and I invite you to try and play with the flavors too. You will see that I covered it with white chocolate, but you can change for a cover of vanilla, caramel, jam or just enjoy it without any other added. It is delicious!
Easy oatmeal cake: Recipe
Ingredients
4 egg whites
2 cups flour
1 cup of sugar
1 tsp baking powder or baking soda
1 cup rolled oats
1 tbsp butter at room temperature
1 cup of milk
1 tsp vanilla essence
oatmeal cake ingredients
For the Frosting:
2 cups of chocolate chips
chopped almonds
Preparation
Preheat oven at 350ºF (or 180ºC)
Beat the egg whites lightly and add the sifted flour with baking powder, oatmeal, butter, milk and sugar. Perfume the preparation with the essence of vanilla.
Mix integrating everything very well until achieving a homogeneous preparation.
Place the preparation in a previously greased and floured rectangular.
Place in preheated oven to cook for about 20 minutes.
Let cool and cut into rectangles of the desired size. Reservation.
Remember that if you want to make bars instead of cake, just use less flour.
For the Frosting:
Put the chocolate the white chocolate chips in a bowl and melt in the microwave for 30 seconds. Immediately cover the entire surface of the cake with the melted chocolate.
Sprinkle with the almonds and let it cool off before cutting.
