Rainy days have a way of making the kitchen feel like the right place to be.
In my case, I really don’t need much of an excuse to make something good to eat. 😂
One afternoon, while it was raining and we were planning to watch a movie with the kids, I decided to make these oatmeal chocolate chip cookies. They turned out so good: lightly golden around the edges, soft in the middle, and packed with chocolate chips.
These are the kind of easy homemade cookies you can make on an ordinary afternoon, simply because you’re craving something sweet.
And if the kids want to help, even better. Measuring the ingredients, mixing the dough, and adding the chocolate chips can become part of the fun.
With cooler days coming, this recipe is also perfect for fall. Serve the cookies with a cup of coffee, a glass of milk, or whatever you like to sip in the afternoon.

Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup (16 tablespoons) butter, at room temperature
- 1 cup light brown sugar
- ½ cup granulated sugar
- 2 eggs, at room temperature
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 cup quick-cooking oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 3 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 325°F (165°C).
- Lightly grease a baking sheet or line it with parchment paper.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the eggs and vanilla extract. Beat until well combined.
- In a separate bowl, mix the flour, oats, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture. Mix until everything is well incorporated.
- Add the chocolate chips and gently mix them into the dough.
- Scoop the cookie dough onto the prepared baking sheet, leaving about 1½ to 2 inches (4 to 5 cm) between cookies.
- Bake for 12 to 17 minutes, until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Once they are firm enough to handle, transfer them to a cooling rack.
Yield: Approximately 20 to 100 cookies, depending on their size.

How Big Should Your Cookies Be?
This recipe works for different cookie sizes:
- Large: approximately 20 cookies
- Medium: approximately 50 cookies
- Small: up to 100 cookies
For a family snack, I like medium-sized cookies. They’re a good size for an afternoon treat and easy for little hands to grab.
And with three full cups of chocolate chips, this recipe takes chocolate chip cookies seriously. 😂
